tiramisu d’abricots au sirop légér de fleurs
et mascarpone au citron
C’est la saison, les abricots sont omniprésents, une petite recette rapide et légère, à déguster tel quel où a monter dans des verres, façon tiramisu…
abricotsune quinzaine
eau100g
sucre100g
fleurs de lavande 1 càs
boutons de roses sèches 5
camomille sèche 1 càs
cannelle 1 baton
extrait de vanille une demie càc
mascarpone 200g
citron1
sucre glace 1 càs
(pour la version tiramisu: biscuits à la cueiller 5)
Faire chauffer l’eau avec le sucre, les fleurs, la cannelle et l’extrait de vanille. Diminuer le feu et ajouter les abricots coupés à moitié, noyeau enlevé. Laisser cuire pendant deuc minutes. Oter les abricots et laisser cuire le reste pendant encore 5-6 minutes de manière à ce que le sirop se réduise un peu. Passer le sirop au chinois. Mélanger le mascarpone avec le zeste du citron. Servire les abricots avec leur sirop à température ambiante et le mascarpone au citron bien froid.
Pour la version tiramisu alterner dans des verres une couche de biscuits trempésa dans le sirop aux fleurs, les abricots cuits et le mascarpone, répéter l’operation jusqu’à épuisement des ingrédients, finir avec des abricots et réserver le tout au frais.

Le tiramisù est très très appétissant et très frais.. Moi j’aurais plutôt mis des amaretti plutôt que des biscuits cuillères (mais c’est parce que j’adore les amaretti, que je les fais maison et qu’en plus, on peut même utiliser les amandes des noyaux d’abricot: rien ne se perd!!).
J’aime aussi la version assiette!

effectivement les recettes aux abricots fleurissent après celles aux cerises.. mais je ne m’en lasse pas et ici, rien que le titre est un appel à l’évasion!
