Ma Calabre à moi:
gouts et couleurs du marché
Cette fois je vous emmène en Calabre, plus précisément en Sila, une chaine montagneuse qui se trouve à coté de Cosenza (si la calabre prend toute la pointe de la botte, cette zone-ci se trouve au nord-ouest). En realité notre villégiature calabraise se trouve à l’est, sur la mer ionienne (à Sibari, una ancienne colonie grecque), mais quand je peux je viens jusqu’ici, à Camigliatello, à faire mon marché car, comme partout, en montagne on trouve encore une longue série de produits artisanaux, traditionnels, au bon gout d’autrefois…
A commencer par le pain… Ce que cette dame tient dans le panier ce sont des ciambelle fritte, des anneaux de pate à pizza frits, une gourmandise qui a mon mari rappelle l’enfance. Moi je me contente de les déguster, chauds et croquants (on les mange tels quels, légèrment salés ou meme saupoudrés de sucre), un régal.
Puis on trouve toute une gamme de taralli (au saindoux!), des anneaux de pain, secs et souvent aromatisés aux graines de fenouil. Autre spécialité du lieu est le pain aux chataignes (farine et morceaux de chataignes). Vu qu’on y était, et que c’était l’heure de midi, on a demandé à une gentille dame de nous confectionner deux panini, avec un peu de sopressata, un saucisson piquant et plat, tipique de toute la calabre.
Rayon fromages…. voici les ricotta sèchées qu’on utilise, rapé, sur les pates (la version fumée est pareille mais de couleur nettement plus foncée et un peu plus rabougrie aussi. En montagne les fromages se font principalement à base de lait de brebis (pecorino), et sont généralement agés. Etant donné qu’on est en Calabre, et qu’en Calabre le peproncino est roi, les fromages aussu tendent à se teinter de mouchetures rouges dues au piment sec que l’on y ajoute.
La giuncata, qui prend son nom du petit panier de joncs dans lequel on fait égoutter ce fromage frais et dont il prend la forme et l’empreinte. Ressemble un peu à une ricotta, mais en plus ferme (parce qu’on le fait égoutter plus longtemps). Un autre fromage de la zone super-célèbre est le caciocavallo dont je n’ai pas pris de fotos, en forme de grosse poire et dont la consistence est assez similaire à celle du provolone, un fromage plutot doux, super bon tranché puis grillé.
Un autre must calabrais: la cipolla di Tropea, c’est un oignon rouge au gout goux, parfait pour relever, cru, les salades estives, avec une bonne pincée d’origan séché de la montagne (si vous avez l’occasion achetez-en, je vous jure que ça n’a rien à voir avec l’origan ducros 
)
Coté fruits, à coté des incontournables figues (j’en ai plein le jardin, mais c’est pas encore la saison), on trouve pas mal de gelsi, un petit fruit blanc ou rouge dont j’ignore le nom en français, et dnt la consistence ressemble un peu à celle des fruits rouges, en moins sucré… Autre roi de la Sila c’est la cèpe, là non plus c’est pas la saison mais dè qu’arrive l’automne les rues se peuplent de petits vendeurs munis de caisses de magnifiques cèpes des bois. En attendant on trouve la version séchée, littéralement, à tous les coins de rue. Dans les meme bois, l’été, c’est la chasse aux fraises des bois, vendues telles quelles ou dans de petites bouteilles de liqueur artisanale.
Enfin, le prosciutto, incontournable lui aussi, celui de la montagne a en général plus de caractère, de force, rien à voir donc avec Parma & co mais une saveur forte et authentique, parfait pour le panino ou dans l’antipasto avec quelques olives et tomates séchées.

La giuncata…J’avais oublié ce truc, acheté un jour d’été 1985, sur le bord d’une route poussiéreuse de l’Aspromonte…Sitot acheté, sitot mangé…Pour le reste, le (lointain) souvenir de ce voyage se résume à une dilatation pondérale, genre 4 kilos en 4 jours, invité que j’étais par des régionaux de l’étape qui avaient juré de me provoquer une stéatose en moins d’une semaine…

Les gelsi c’est les fruits du mûrier (l’arbre dont les vers à soie mangent les feuilles). J’ai découvert la glace au gelsi en Sicile, j’ai dû demander trois fois ce que c’était!
Là où j’habite je vais de temps en temps manger les antipasti dans un restaurant calabrese, et ils servent le fromage accompagné d’une confiture de peperoncino, j’adore!

Tu me donnes envie de découvrir la Calabre. Depuis quelques semaines, cela me démange vraiment, notamment depuis la lecture du dernier roman de Laurent Gaudé, “Le Soleil des Scorta”, dont l’intrigue se déroule dans la région des Pouilles. Si tu ne l’as pas lu, je ne peux que te le conseiller (éditions Actes-Sud). Ce marché est superbe et l’étalage de fromage !!! Tudieu !!!

Je vais de haut en bas, de bas en haut, et constamment, c’est à la table des fromages que je reviens. Elle est à faire rêver! Ici, ce serait impensable d’avoir ainsi les fromages sur une table extérieure: déjà qu’il a fallu se battre pour garder nos fromages de lait cru sur les tablettes…

je souhaite faire un voyage de 10 jours en italie du sud de naples, calabre ou sont nés mes parents et sicile; avec ma femme et 4 enfants.
pendant les vacances d’avril.
j’ai un budget de 2000 euros.je pensais partir avec ma voiture , un espace.
pensez vous qu’a ce tarif je puisse me payer l’avion et voiture de location?
Il y a t il des risques importants de vol de vehicules en italie dans et hors des grandes villes?

quel plaisir de decouvrir ces photos!! etant moi meme originaire de la calabre et n’y etant pas allé depuis 6 ans ca me manque! je confirme que la ricotta est un vraie delice, aussi bien fraiche ( salé et sucré) que seche. Mais petite correction si je peux me permette, Caciocavallo est plutot originaire des abbruzze ou molise.
pour repondre à Joseph pour 2000euros on peu passer de superbe vacances, sans se faire voler sa voiture, tout en evitant les lieux touristiques.
