carpaccio de courgettes
Je dois etre un peu dérangée tout de meme: l’été j’attends impatiemment le retour des pots au feu, des choux et des patates puis, comme les premières feuilles commencent à tomber, v’là t’y pas que je me remets à produire des choses estives… Bref, le piatto del giorno est une petite entrée légère avec les dernières courgettes, parfaite pour un midi de canicule, mais agréable aussi maintenant, pour commencer un diner gourmand en élégance.
courgettes 4
aceto balsamico tradizionale 4 gouttes
roquette 50g
ail une gousse
pignons 4 càs
fleur de sel
poivre noir du moulin
parmesan extra-vieux en coppeaux
huile d’olive extravierge fruitée
Laver les courgettes et les trancher dans la longueur en fines lamelles. Disposer ces lamelles sur 4 plats (j’en ai mis 8 par plat en les entrelaçant), saupoudrer d’un peu de fleur de sel, de poivre fraichement moulu, quelques gouttes d’huile d’olive et le vinaigre balsamique. Laisser reposer le tout. Mixer la roquette avec la gousse d’ail et 1 càs d’huile d’olive et faire tomber des gouttes de ce pesto sur les courgettes. Chauffer une poele antiadesive et y faire dorer les pignons, les ajouter sur le carpaccio. Ajouter enfin les coppeaux de parmesan et servir.
