Ravioli alla ricotta fumée,
sauce melon au basilic et cerises
Encore une fois il s’agit d’une recette d’un ami chef: Filippo Artioli è originaire de Ferrara mais travaille en Ombrie, près de Bevagna. Le restaurant s’appelle Redibis et est flanqué d’une somptueuse résidence d’époque, l’Orto degli angeli. Bref, si vous passez dans le coin, ne le ratez pas, l’expérience en vaut vraiment le coup. En attendant je lui ai piqué une recette de raviolis (lui appelle ces petits triangles de pates fraiche farcies tortelli), dans une interprétation décidément estive, fraiche et à la fois décise.
Pour ce qui est de la ricotta fumée, il s’agit de ricotta affinée (et donc dure, rien à voir avec la version fraiche) puis mise à fumer sur feu de bois. La ricotta dure non fumée (toute blanche) est très utilisée dans le sud, surtout dans les Pouilles, et s’utilise essentiellement pour relever les pates, la version fumée a évidemment en plus un solide gout de feu de bois ce qui est tout à fait intéressant. A défaut de trouver cette ricotta, essayer avec un autre type de fromage fumé, rapé, où bien tentez le coup vous meme, dans le jardin…
Pour les ravioli:
farine 00 200g
oeufs 2
ricotta di brebis fraiche 25g
ricotta fumée 25g
sel
poivre noir
échalotte (grande) 1
Pour la sauce:
melon 100g
huile d’olive etravièrge 6g
basilic 4 feuilles
pecorino (fromage de brebis extra-vieux) 50g
cerises 15
Pétrir la farine, les oeufs, une pincée de sel et 1 càs d’huile d’olive. Filmer et laisser reposer pendant 1 heure. Mettre l’échalotte entière au four et cuire à 140° pendant une vingtaine de minutes. Raper la ricotta fumée et préparer la farce en mélangeant les deux types de ricotta, la pulpa de l’échalotte, une pincée de sel et de poivre noir. Couper le melon en dés, ajouter l’huile et réduire le tout en coulis à l’aide du mixer à immersion. Ajouter les feuilles de basilic entières et laisser infuser au frais pendant une heure. Abaisser la pate au rouleau ou à la machine, découper des carrés de 8 cm de coté, déposez une petite ceuillerée de farce, et sceller en triangle avec une peu d’eau. Enfin, dénoyauter les cerises et les couper en petits morceaux. Juste avant de servir, faire cuire les raviolis dans une grande casserole d’eau salée. Eliminer le basilic et verser dans chaque plat un fond de coulis au melon, dèposez 4-5 raviolis par plat, finir avec les cerises, quelques coppeux de pecorino, un filet d’huile crue et quelques feuilles de basilic.
