Tatin figues et gorgonzola
Je m’appretes à partir en Calabre (encore… c’est que Rome en aout est complètement vide!) où, entre autres gourmandises, je m’appliquerai à la ceuillette des figues du jardin. En attandant je vous souhaite d’excellentes vacances et je vous laisse une petite recettes salée à base de mes fruits préférés, à cuisiner en un tour de main et qui en épatera plus d’un.
figues violettes (petites) 500g
une base de pate brisée (mieux si faite maison)
gorgonzola doux 100g
échalotte 1
huile d’olive 2 càs
vinaigre balsamique 1càs
Laver les figues, les couper à moitié et les poser dans une poele antiadésive, face coupée en dessous, avec l’huile d’olive et l’échalotte finement émincée. Faire chauffer gentiment et cuire pendant une dizaine de minutes. Lorsque les figues seront plutot molles et auront relaché leur jus, augmenter la flamme, ajouter le vinaigre et laisser caraméliser pendant une minute. Saler et poivrer. Dans un moule à tartes (ou 4 moules individuels) déposer une couche de figues (face coupée vers le dessus), ajouter le jus réduit des figues et le gorgonzola coupé en fines lamelles. Déposer la parte brisée par dessus, fermer soigneusement et passer au four chaud (180°) pendant 12 minutes, le temps de cuire la pate. Laisser tiédir et retourner la ou les tatins sur un plat. Servire avec une petite salade fraiche.
